ELABORATION:
In order to
elaborate this wine we introduce the complete bunch into the
tank. The grape in these conditions undergoes an enzymatic
fermentation where natural carbonic anhidric is released This
proccess confers to the wine an specific flavour and aroma. In
October of 2009 after 12 days of carbonic maceration, the grapes
are pressed to finish the alcoholic fermentation.
To finish the elaboration, the wine is clarifiy and decanted.
TASTING THE WINE:
Intense purpple
color, aroma of fruits of the forest, black berry with pleasant
milky notes. Fresh in mouth with the characteristic tannicity of
wines elaborated by this method of elaboration.
